Spelt salad with avocado and tomato

Ingredients:

  • 100 g cooked spelt.
  • 1 ripe avocado, diced.
  • 2 medium tomatoes, chopped.
  • Fresh basil leaves.
  • Juice of half a lemon.
  • 2 tablespoons extra virgin olive oil.
  • Salt and pepper to taste.

Preparation:

  1. In a large bowl, mix the cooked spelt with the avocado and tomatoes.
  2. Add the chopped basil leaves.
  3. Dress with the lemon juice, olive oil, salt and pepper.
  4. Mix gently and serve fresh.
